    Bakgrund: På Statens institutionsstyrelses (SiS) särskilda ungdomshem bor ungdomar med psykosociala problem, till exempel missbruk och kriminalitet. Ungdomar som är omhändertagna och får vård mot sin vilja befinner sig i en komplex situation. Då dessa människor inte har stor möjlighet att påverka sin mat- och måltidssituation kan det vara intressant att undersöka hur de upplever denna.

    Syfte: Syftet med uppsatsen var att undersöka intagna ungdomars upplevelse av sin mat- och måltidssituation vid boende på ungdomshem.

    Metod: En semistrukturerad intervjustudie med en framtagen intervjuguide genomfördes på ett statligt ungdomshem i Mellansverige. Sju personer intervjuades. Intervjuerna analyseras med hjälp av kvalitativ innehållsanalys.

    Resultat: Analysen resulterade i tre huvudsakliga teman: Maktlöshet och missnöje, Måltider – källa till gemenskap och otrygghet och Matens roll i relationen till personalen. Informanterna upplevde ett missnöje gällande maten som serverades på institutionen. De ansåg framförallt att variationen av maträtter var otillräcklig. Vidare upplevdes måltidssituationen stundtals som otrygg då den delades med andra avdelningar på institutionen. Att personalen ibland använde maten som ett verktyg för bestraffning samt ansågs vara otydliga i sin kommunikation upplevdes som problematiskt.

    Slutsats: Att vara frihetsberövad innebär en begränsning av självbestämmandet. Denna form av boendesituation kräver en struktur av rutiner och fasta tidpunkter för att fungera och det är obestridligt att självbestämmandet är mindre än vid ett liv i frihet. Dock bör myndigheten eventuellt överväga att till viss del öka graden av inflytande från ungdomarna, i syfte att skapa en bättre mat- och måltidsupplevelse för ungdomarna som bor på deras institutioner.

    BACKGROUND: Underweight, overweight, and obesity in childhood and adolescence are associated with adverse health consequences throughout the life-course. Our aim was to estimate worldwide trends in mean body-mass index (BMI) and a comprehensive set of BMI categories that cover underweight to obesity in children and adolescents, and to compare trends with those of adults.

    METHODS: We pooled 2416 population-based studies with measurements of height and weight on 128·9 million participants aged 5 years and older, including 31·5 million aged 5-19 years. We used a Bayesian hierarchical model to estimate trends from 1975 to 2016 in 200 countries for mean BMI and for prevalence of BMI in the following categories for children and adolescents aged 5-19 years: more than 2 SD below the median of the WHO growth reference for children and adolescents (referred to as moderate and severe underweight hereafter), 2 SD to more than 1 SD below the median (mild underweight), 1 SD below the median to 1 SD above the median (healthy weight), more than 1 SD to 2 SD above the median (overweight but not obese), and more than 2 SD above the median (obesity).

    FINDINGS: Regional change in age-standardised mean BMI in girls from 1975 to 2016 ranged from virtually no change (-0·01 kg/m(2) per decade; 95% credible interval -0·42 to 0·39, posterior probability [PP] of the observed decrease being a true decrease=0·5098) in eastern Europe to an increase of 1·00 kg/m(2) per decade (0·69-1·35, PP>0·9999) in central Latin America and an increase of 0·95 kg/m(2) per decade (0·64-1·25, PP>0·9999) in Polynesia and Micronesia. The range for boys was from a non-significant increase of 0·09 kg/m(2) per decade (-0·33 to 0·49, PP=0·6926) in eastern Europe to an increase of 0·77 kg/m(2) per decade (0·50-1·06, PP>0·9999) in Polynesia and Micronesia. Trends in mean BMI have recently flattened in northwestern Europe and the high-income English-speaking and Asia-Pacific regions for both sexes, southwestern Europe for boys, and central and Andean Latin America for girls. By contrast, the rise in BMI has accelerated in east and south Asia for both sexes, and southeast Asia for boys. Global age-standardised prevalence of obesity increased from 0·7% (0·4-1·2) in 1975 to 5·6% (4·8-6·5) in 2016 in girls, and from 0·9% (0·5-1·3) in 1975 to 7·8% (6·7-9·1) in 2016 in boys; the prevalence of moderate and severe underweight decreased from 9·2% (6·0-12·9) in 1975 to 8·4% (6·8-10·1) in 2016 in girls and from 14·8% (10·4-19·5) in 1975 to 12·4% (10·3-14·5) in 2016 in boys. Prevalence of moderate and severe underweight was highest in India, at 22·7% (16·7-29·6) among girls and 30·7% (23·5-38·0) among boys. Prevalence of obesity was more than 30% in girls in Nauru, the Cook Islands, and Palau; and boys in the Cook Islands, Nauru, Palau, Niue, and American Samoa in 2016. Prevalence of obesity was about 20% or more in several countries in Polynesia and Micronesia, the Middle East and north Africa, the Caribbean, and the USA. In 2016, 75 (44-117) million girls and 117 (70-178) million boys worldwide were moderately or severely underweight. In the same year, 50 (24-89) million girls and 74 (39-125) million boys worldwide were obese.

    INTERPRETATION: The rising trends in children's and adolescents' BMI have plateaued in many high-income countries, albeit at high levels, but have accelerated in parts of Asia, with trends no longer correlated with those of adults.

    Introduktion: Inom religioner har mat en central roll. Alla barn ska erbjudas bra mat i skolan, även barn som definierar sig med religioner. Skolmåltiden påverkar eleverna på flera sätt och är därför viktiga för dem.

    Syfte: Syftet med denna studie är att undersöka hur ledande personer inom kommunala måltidsverksamheter uppfattar hanteringen av religionsanpassad kost på kommunala grundskolor.

    Metod: En kvalitativ studiemetod användes. Fem semistrukturerade intervjuer utfördes med hjälp av en intervjuguide. De transkriberade intervjuerna analyserades genom tematisk analys.

    Resultat: Deltagarnas uppfattning kring regelverk är att det finns många politiska beslut som ska tas hänsyn till vid planering av skolmåltider, inte minst vid planering av religionsanpassade måltider. Den största religiösa anpassningen som görs vid skolmåltiderna är enligt deltagarna att servera "minus fläsk", mat utan innehåll av fläskkött. Andra religiösa anpassningar som att servera halalslaktat kött eller koshermat görs inte, utan eleverna hänvisas till det vegetariska alternativet vid dessa tillfällen. Generellt finns en åsikt bland deltagarna att skolmaten ska vara neutral och fri från religiösa åskådningar.

    Konklusion: Utifrån perspektivet från fem ledande personer inom kommunala måltidsverksamheter ses att kommunala skolmåltider ofta styrs av politiska beslut vilket även påverkar de religionsanpassade måltiderna. Generellt ses att måltidsaktörerna gör sitt yttersta för att hitta en balans i religionsanpassningen, vilket vid en del tillfällen har lett till upprörda elever och föräldrar. God kommunikation mellan parterna visar dock att eventuella konflikter löser sig vid förklaring av anpassningarna. Att det finns en vilja till att ha en religionsneutral miljö i skolmatsalarna ses vid firandet av högtider då alla deltagare upplever att högtiderna som uppmärksammas är svenska traditioner och inte kopplade till någon religion.

    Introduktion: År 2013 skapades ett internationellt verktyg med ny standardiserad terminologi för att beskriva konsistensanpassad kost, International Dysphagia Diet Standardisation Initiative (IDDSI). Denna terminologi översattes till svenska och anpassades kulturellt år 2020 och har därefter börjat implementeras kliniskt inom vården samt inom forskning i Sverige. Verktyget berör främst arbetet med dysfagi, en vård där dietisten har en viktig roll.

    Syfte: Syftet med denna studie är att undersöka dietisters reflektioner kring arbetet med konsistensanpassad kost och implementeringen av IDDSI.

    Metod: Kvalitativa semistrukturerade intervjuer genomfördes med sju dietister från fyra olika sjukhus i Stockholms region. Intervjuerna transkriberades och analyserades utifrån en tematisk analys.

    Resultat: De två teman som identifierades i analysen var utmaningar vid konsistensanpassning och ansvarsfördelning. Det första temat hade underkategorierna brist i kommunikation, restriktivitet vid IDDSI och sensorisk måltidsupplevelse medan det andra temat hade underkategorierna ledarskap, interprofessionellt samarbete, dietistens roll inom livsmedelssäkerhet- och hygien samt organisationer. Resultatet visade att dietisterna upplevde en begreppsförvirring med tidigare klassificering och att det fanns ett behov av en standardiserad terminologi. Dietisterna såg sig själva som en del i implementeringen, men ett ansvar lades även på logopeder, ledning och yttre organisationer.

    Slutsats: Dietisterna beskrev en svårighet i att uppnå hög sensorisk kvalitet vid konsistensanpassad kost. Vidare sågs ett behov av en standardiserad terminologi för konsistensanpassning för att förbättra kommunikationen och öka patientsäkerheten. Dock sågs svårigheter i klassificering av IDDSI samt en risk för restriktivitet hos patienterna. Ledning, engagemang och det interprofessionella samarbetet sågs som ledande framgångsfaktorer i implementeringen men också som potentiella hinder. Dietisterna såg ett behov av utbildning och kunskap både inom den egna professionen och hos personal på avdelning. Samarbetet mellan dietist och logoped lyftes som en central faktor för implementeringen men hur inkluderad dietisten upplevde sig vara i det interprofessionella arbetet varierade.

    Abstract [en]

    Type 2 diabetes (T2D) and its complications are increasing rapidly in low- and middle-income countries, as well as among socioeconomically disadvantaged populations in high-income countries. Support for healthy lifestyle and self-management is paramount but not well implemented in health systems, and there is need for knowledge on how to design and implement interventions that are contextualized and patient centered and address special needs of disadvantaged population groups. The SMART2D project implements and evaluates a lifestyle and self-management intervention for participants recently diagnosed with or being at increased risk for T2D in rural communities in Uganda, an urban township in South Africa, and socioeconomically disadvantaged urban communities in Sweden. Our aim was to develop an intervention with shared key functions and a good fit with the local context, needs, and resources. The intervention program design was conducted in three steps facilitated by a coordinating team: (a) situational analysis based on the SMART2D Self-Management Framework and definition of intervention objectives and core strategies; (b) designing generic tools for the strategies; and (c) contextual translation of the generic tools and their delivery. This article focuses on community strategies to strengthen support from the social and physical environment and to link health care and community support. Situational analyses showed that objectives and key functions addressing mediators from the SMART2D framework could be shared. Generic tools ensured retaining of functions, while content and delivery were highly contextualized. Phased, collaborative approach and theoretical framework ensured that key functions were not lost in contextualization, also allowing for cross-comparison despite flexibility with other aspects of the intervention between the sites.

    BAKGRUND FODMAP är en behandlingsmetod för IBS som kommer från Australien och som är relativt ny i Sverige. FODMAP betyder Fermentable Oligo-, Di- and Monosacharides and Polyols och går ut på att begränsa mängden fermenterbara kolhydrater i kosten. Dessa kolhydrater har i studier visat sig kunna orsaka många av de symptom som IBS-patienter lider av och att så många som 3 av 4 av de patienter som testar behandlingen får reducerade symptom.

    SYFTE Syftet med studien var att undersöka och belysa dietisters erfarenheter, uppfattning och hantering av FODMAP.

    METOD Kvalitativa intervjuer baserade på en semistrukturerad frågeguide genomfördes. Totalt 12 dietister intervjuades och samtalen skedde via personliga besök eller telefon. Intervjuerna spelades in för att sedan transkriberas. Samtalen analyserades genom kvalitativ innehållsanalys.

    RESULTAT Dietisterna hade olika lång erfarenhet av att jobba med FODMAP. Metoden beskrevs som strukturerad och tydlig och kan ge goda resultat. De flesta hade kommit i kontakt med metoden via praktik, jobb eller föreläsningar. Dietisterna jobbar antingen med enskilda samtal eller med grupper. Problem kan uppstå med att metoden kan uppfattas som krånglig för patienten, att den endast fokuserar på kolhydrater och inte på andra möjliga orsaker såsom stress och andra näringsämnen som kan ge symptom samt med att dietisterna själva inte kallar patienten utan får dem remitterade från läkare. Inga problem ses med näringsintag så länge strikt behandling enbart sker på kort sikt. Få dietister tittade på ett vidare hälsoperspektiv. Den viktigaste faktorn för en lyckad behandling var motivation och följsamhet från patienten.

    SLUTSATS Vid arbete med FODMAP behövs goda kunskaper och erfarenhet samt god tillgång till fungerande rutiner och resurser. För att kunna utföra en adekvat behandling krävs även en stark motivation och följsamhet hos patienten. En lyckad behandling ökar motivationen hos dietister att arbeta med behandlingen. Vår studie ger indikationer om att de dietister som har goda kunskaper, hög motivation samt erfarenhet av FODMAP är positiva till behandlingen och har lättare för att hitta lösningar på de problem som uppstår. Övergripande hälsoaspekter och probiotika behöver lyftas fram och tillföras som en del av behandlingen. Mer forskning och utbildning behövs för en klarare bild av hur FODMAP bäst ska tillämpas som behandlingsmetod.

    Food Related Activities and Food Intake in Everyday Life among People with Intellectual Disabilities2010Doctoral thesis, comprehensive summary (Other academic)

    The aim of this thesis was to study food, eating and meals in the everyday life of 32 women and men with intellectual disabilities (IDs) who require varying levels of supervision. They lived in supported living (rather independently) or group homes in community-based home-like settings. Observations during 3 days, assisted food records and anthropometric measurements were used to collect data. Dietary intake on the group level showed a varied diet and sufficient intake of all micronutrients, but a low dietary fibre intake. On the individual level, inadequate intake of micronutrients was observed, with many participants being obese, overweight or underweight. Everyday support with food, eating and meals was seen in four praxis: foodwork by oneself for oneself, foodwork in co-operation, foodwork disciplined by staff and foodwork by staff. These four practices resulted in large variations in dietary intake. The first praxis entailed more convenience food and less vitamins, the second and third, more fresh ingredients and high energy intake, and the fourth, low energy intake but rather high intake of vitamins. Sharing of meals was least common in supported living and more common in group homes and daily activity centres. The participants’ social eating spheres consisted mostly of other people with ID and staff members, and seldom other people. Whereas some preferred solitary eating, many participants considered eating together as important, but required staff support in establishing commensality. However, disturbing behaviour, as determined by the staff, could result in solitary eating. In conclusion, supporting the group rather than the individual sometimes created less favourable dietary, eating and meal outcomes. This problem needs to be addressed in order to establish food security at the individual level. In addition, actions should be taken to ensure that people with intellectual disabilities receive sufficient support to meet their individual needs and aspirations.

    Abstract [en]

    Background: Knowledge is lacking about dietary habits among people with intellectual disability (ID) living in community residences under new living conditions.

    Objective: To describe the dietary habits of individuals with ID living in community residences, focusing on intake of food, energy and nutrients as well as meal patterns.

    Design: Assisted food records and physical activity records over a 3-day observation period for 32 subjects.

    Results: Great variation was observed in daily energy intake (4.9-14 MJ) dispersed across several meals, with on average 26% of the energy coming from in-between-meal consumption. Main energy sources were milk products, bread, meat products, buns and cakes. The daily intake of fruit and vegetables (320_221 g) as well as dietary fiber (21_99.6 g) was generally low. For four vitamins and two minerals, 19-34% of subjects showed an intake below average requirement (AR). The physical activity level (PAL) was low for all individuals (1.4_0.1).

    Conclusion: A regular meal pattern with a relatively high proportion of energy from in-between-meal eating occasions and a low intake of especially fruits were typical of this group of people with ID. However, the total intake of energy and other food items varied a great deal between individuals. Thus, every adult with ID has to be treated as an individual with specific needs. A need for more knowledge about food in general and particularly how fruit and vegetables could be included in cooking as well as encouraged to be eaten as inbetween-meals seems imperative in the new living conditions for adults with ID.

    The food provision for people with intellectual disability (ID) in Sweden is organized within their own households. The aim of this study was to describe how foodwork – planning for meals, shopping for food and cooking – is performed in different social contexts in community settings involving people with ID, staff or both. Dietary intake in the main meals in relation to foodwork practice was also studied. Four different foodwork practices could be distinguished. For some participants only one kind of foodwork practice was found, but for most of them two or more different practices. There was a tendency that food items and dishes chosen and used differed depending on what foodwork practice was performed, which, in turn, affected the nutrient intake. More attention needs to be directed to these everyday matters as a means to increase the quality of support in food for people with ID.

    Background:

    In Sweden, a process involving the deinstitutionalisation of services and the establishment of community-based settings for people with intellectual disability has meant changes in meal arrangements. In the present study, we focus on the social arrangements of meals in community-based settings.

    Method:

    Participant observations were used to study the meals as social events for 32 participants, 9 of whom lived in supported living and 23 in group homes.

    Results:

    Breakfast and dinner were often eaten alone, while lunch at the daily activity centre and the food eaten between meals snacks were mostly shared with other people. Meals for participants in supported living were seldom social, and meals for participants in the group homes often hierarchical.

    Conclusion:

    The participants were often limited in choosing their company at meals, which typically consisted of other people with intellectual disability and staff. If they made such choices, they were dependent upon staff support to realise them.

    Bakgrund: Sverige har ett växande antal äldre medborgare vars medellivslängd ökar. Det blir allt viktigare att förebygga ohälsosamma matvanor hos äldre för att de ska kunna leva inte bara längre, utan också friskare liv så långt det är möjligt.

    Syfte: Syftet var att undersöka äldres kännedom om och följsamhet till Livsmedelsverkets kostråd för frukt och grönsaker samt fisk. Vidare var syftet att undersöka den rapporterade tilltron till egen handlingsförmåga, avsikt och handlingsplanering hos äldre i ordinärt boende att äta enligt dessa kostråd samt om det finns samband mellan samtliga ovan nämnda faktorer.

    Metod: Kvantitativ pappers och webbenkät delades ut efter ett bekvämlighetsurval. Tre ovannämnda faktorer av beteendeförändringsmodellen Health Action Process Approach (HAPA) undersöktes.

    Resultat: Enkäten besvarades av 210 personer. En stark majoritet (82,5%) hade kännedom om varför rekommendationer finns för frukt och grönt samt för fisk (87%). Endast ett fåtal (6%) rapporterade att de följde Livsmedelsverkets rekommendation om 5 portioner frukt och grönt per dag. Samtidigt rapporterade över hälften (52%) att de följde den rekommenderade mängden 2-3 portioner fisk i veckan. En majoritet av respondenterna angav att de hade en avsikt och även tilltro till egen handlingsförmåga att äta både frukt och grönt och fisk enligt rekommendationerna. Av respondenterna angav 43 % att de planerar för att äta frukt och grönt enligt rekommendationen om 5 portioner per dag och 50 % angav att de planerar för att äta fisk enligt rekommendationen om 2-3 portioner per vecka. Sambanden var svaga och positiva. Sex av dessa var statistiskt signifikanta (p<0,001).

    Slutsats: Majoriteten av de äldre rapporterade att de hade kännedom om kostråden samtidigt var det färre som rapporterade att de följde dessa. Majoriteten av de äldre har en hög rapporterad tilltro till egen handlingsförmåga och en hög rapporterad avsikt att äta enligt kostråden för både frukt och grönt samt fisk, men det var färre äldre som rapporterade att de handlingsplanerade för det. De svaga och positiva sambanden visar att det i princip inte fanns någon korrelation mellan faktorerna. En mera omfattande studie behövs för att undersöka om stärkande av respondenternas handlingsplanering skulle få flera att följa kostråden.

    Bakgrund: Andelen äldre är i idag en kraftigt växande grupp och med stigande ålder ökar risken för sjukdom och ohälsa, däribland undernäring. Hemtjänsten bistår äldre med personlig omvårdnad vilket kan innebära att äta, förflytta sig eller sköta personlig hygien och det är idag den typ av äldreomsorg som kommunerna främst prioriterar. Tidigare forskning visar att hemtjänstpersonalen upplever svårigheter i sitt arbete. Återkommande aspekter är tidsbrist, bristande kompetens, oklar ansvarsfördelning mellan kommun och primärvård samt äldre individer som lever i ensamhet.

    Syfte: Att undersöka hemtjänstpersonals upplevelser och hantering av det matrelaterade arbetet hos äldre.

    Metod: Sex kvalitativa intervjuer genomfördes med hemtjänstpersonal inom Stockholms stad. En semistrukturerad frågeguide användes vid intervjuerna och de transkriberade intervjuerna analyserades utifrån en kvalitativ innehållsanalys.

    Resultat: Studien visar på att personal inom hemtjänsten upplever flera utmaningar i sitt arbete. Brist på tid beskrivs som det största problemet. Utöver tidsbrist framkommer den äldre brukaren som lever i ensamhet samt äldres autonomitet som utmaningar. För att komma runt dessa använder sig personalen av olika typer av planering och förberedelser. Samtliga deltagare är engagerade i sitt arbete och känner ett ansvar för de äldres matintag.

    Slutsats: De utmaningar som hemtjänstpersonalen upplever inom arbetet bör uppmärksammas för att i framtiden kunna utveckla och förbättra det matrelaterade arbetet inom hemtjänsten och på så sätt minska förekomsten av undernäring.

    Abstract [en]

    Background: There appears little consensus concerning protein requirements in phenylketonuria (PKU). Methods: A questionnaire completed by 63 European and Turkish IMD centres from 18 countries collected data on prescribed total protein intake (natural/intact protein and phenylalanine-free protein substitute [PS]) by age, administration frequency and method, monitoring, and type of protein substitute. Data were analysed by European region using descriptive statistics. Results: The amount of total protein (from PS and natural/intact protein) varied according to the European region. Higher median amounts of total protein were prescribed in infants and children in Northern Europe (n = 24 centres) (infants <1 year, >2-3 g/kg/day; 1-3 years of age, >2-3 g/kg/day; 4-10 years of age, >1.5-2.5 g/kg/day) and Southern Europe (n = 10 centres) (infants <1 year, 2.5 g/kg/day, 1-3 years of age, 2 g/kg/day; 4-10 years of age, 1.5-2 g/kg/day), than by Eastern Europe (n = 4 centres) (infants <1 year, 2.5 g/kg/day, 1-3 years of age, >2-2.5 g/kg/day; 4-10 years of age, >1.5-2 g/kg/day) and with Western Europe (n = 25 centres) giving the least (infants <1 year, >2-2.5 g/kg/day, 1-3 years of age, 1.5-2 g/kg/day; 4-10 years of age, 1-1.5 g/kg/day). Total protein prescription was similar in patients aged >10 years (1-1.5 g/kg/day) and maternal patients (1-1.5 g/kg/day). Conclusions: The amounts of total protein prescribed varied between European countries and appeared to be influenced by geographical region. In PKU, all gave higher than the recommended 2007 WHO/FAO/UNU safe levels of protein intake for the general population.

    Bakgrund: Ett intresse hos konsumenter för mat kopplat till tarmfloran har setts av Livsmedelsverket. Fenomenet gut-brain axis har nyligen fått acceptans i forskarvärden. Sambandet mellan mage, tarm och psyket tyder på att gut-brain axis har inflytande på humör samt beteende.

    Syfte: Undersöka individers kännedom om och attityd till tarmflora och gut-brain axis med fokus på mental hälsa samt om konsumenter är villiga att välja livsmedel med betydelse för tarm- och mental hälsa.

    Metodbeskrivning:´Webbenkät delades via sociala medier. Frågorna gällde främst konsumenters attityd och kännedom kring tarmfloran. Svaren redovisas i figurer och tabeller. Chi-två tester i SPSS har genomförts.

    Resultat: 493 enkätsvar. Majoriteten av respondenterna har kännedom om en dubbelriktad kommunikation mellan hjärna och tarm. Kännedomen om begreppet gut-brain axis var låg, men det finns ett samband mellan kännedom om begreppet och utbildningsnivå samt ålder. Majoriteten hade kännedom om sambandet mellan kost, tarmflora och mental hälsa. Skepsis fanns beträffande livsmedel som marknadsfördes med påståendena “balanserar din tarmflora” respektive “förbättrar ditt mentala välmående” med lägre positiv attityd till påståendet om mentalt välmående.

    Slutsats: Den dubbelriktade kommunikationen mellan tarmen och hjärnan, samt den mentala hälsan, är bekant för konsumenten, dock inte begreppet gut-brain axis. Attityden till livsmedel med påståenden gällande tarmflora kopplat till mental hälsa är negativ. Kännedomen är fortfarande liten vad gäller fackbegrepp, men det finns stort intresse för att medvetet äta mat som balanserar tarmfloran. Vetenskaplig information gällande tarmfloran bör i framtiden på ett lätt sätt kommuniceras i större utsträckning till konsumenterna.

    This thesis is aimed at exploring the process of evaluating nutrition interventions for patients at risk of malnutrition from a person-centred perspective. 

    An explorative cross-sectional study was conducted based on data from the International Nutrition Care Process and Terminology Implementation Survey (INIS). Associations between the reported documentation of goals and outcomes and the reported implementation of the nutrition care process and its terminology, demographic factors, and factors associated with the workplace were explored. Responses were received from 347 Scandinavian dietitians. Strong associations were found between the implementation of nutrition monitoring and evaluation terminology and the documentation of goals and outcomes. Standardisation may support the documentation of goals and outcomes, and improve nutrition monitoring and evaluation. 

    Focus group interviews were held with Swedish dietitians working in hospital and primary healthcare settings. The dietitians’ reflections on the process of nutrition monitoring and evaluation (Paper II) and the goal-setting process (Paper III) with patients at risk of malnutrition in nutrition intervention were explored. A lack of routine and structure in the process of evaluation and a lack of shared decision-making (SDM) in goal-setting was found. Dietitians described qualitative subjective outcomes as being most important to patients but that these are only implied in the nutrition intervention. They highlighted discrepancies between their clinically oriented goals and the patients’ own goals. The clarification of patients’ perspectives in the evaluation process is necessary to promote person-centredness, improve communication, and support the evidence-informed practice of nutrition intervention.

    An interview study with patients at risk of malnutrition was conducted. Patients’ experiences, perspectives and needs concerning goals in nutrition intervention were explored. Patients rarely reflected on goals in nutrition interventions, instead they described striving towards increased strength and energy. Goal-setting is part of the dietitian’s structured way of working, while the patient’s life-world is complex and unstructured. Elucidating patients’ goals may counteract the discrepancies between the dietitians’ clinically oriented goals and patients’ perspectives.

    In summary, this thesis highlights the need for tools and strategies for the improvement of the evaluation process in nutrition intervention. The person-centred practice of the evaluation process is described in this thesis as key to improving this process. This can be achieved through exploring what matters to patients in terms of perspectives, goals, and priorities, creating partnerships through involving patients in goal-setting and communicating feedback, and documenting and evaluating outcomes that are meaningful to patients.

    Background

    The documentation of goals and outcomes of nutrition care in Electronic Health Records is insufficient making further exploration of this of particular interest. Identifying common features in documentation practice among Scandinavian dietitians might provide information that can support improvement in this area.

    Aims

    To explore the associations between clinical dietitians' self-reported documentation of patients' goals and outcomes and demographic factors, self-reported implementation of the systematic framework the Nutrition Care Process 4th step (NCP) and its associated terminology, and factors associated with the workplace.

    Methods

    Data from a cross-sectional study based on a previously tested web-based survey (INIS) disseminated in 2017 to dietitians in Scandinavia (n = 494) was used. Respondents were recruited through e-mail lists, e-newsletters and social media groups for dietitians. Associations between countries regarding the reported documentation of goals and outcomes, implementation levels of the NCP 4th step, demographic information and factors associated with the workplace were measured through Chi-square test. Associations between dependent- and independent variables were measured through logistic regression analysis.

    Results

    Clinically practicing dietitians (n = 347) working in Scandinavia, Sweden (n = 249), Norway (n = 60), Denmark (n = 38), who had completed dietetic education participated. The reported documentation of goals and outcomes from nutrition intervention was highly associated with the reported implementation of NCP 4th step terminology (OR = 5.26; p = 0.009, OR = 3.56; p = 0.003), support from the workplace (OR = 4.0, p < 0.001, OR = 8.89, p < 0.001) and area of practice (OR = 2.02, p = 0.017). Years since completed dietetic training and educational level did not have any significant associations with documentation practice regarding goals and outcomes.

    Conclusion

    Findings highlight strong associations between the implementation of the NCP 4th step terminology and the documentation of goals and outcomes. Strategies to support dietitians in using standardized terminology and the development of tools for comprehensive documentation of evaluation of goals and outcome are required.

    BACKGROUND: Nutrition care plays a significant role in the prevention and treatment of malnutrition, although the challenge to establish the precise impact of a nutrition intervention on patient outcomes remains. Malnutrition can be associated with diverse underlying diseases and an increased risk of complications, which increases the difficulty of monitoring and evaluating the nutrition intervention. The aim is to gain an understanding of dietitians' reflections concerning nutrition care outcomes of interventions in patients at risk of malnutrition.

    METHODS: Six semi-structured audio-recorded focus group discussions with registered dietitians from primary healthcare and hospitals (n = 29) in Sweden were held at the dietitians' place of work or at the University. Focus group transcripts were analysed thematically to reveal patterns in the data and identify themes and subthemes.

    RESULTS: The dietitians described an approach to nutrition monitoring and evaluation of patients at risk of malnutrition that was categorised into three themes: (i) quantitative explicit outcomes, based on objective measures and described as rigorous; (ii) quantitative estimated outcomes, based on estimates and described as less rigorous and (iii) qualitative implicit outcomes, based on patients' subjective perceptions and experiences of their health and described as difficult to measure.

    CONCLUSIONS: Findings indicate the need for new strategies to promote systematic and comprehensive nutrition monitoring and evaluation.

    Objective: Setting goals collaboratively with patients is a key aspect in shared decision-making (SDM) in malnutrition interventions. The aim, therefore, was to gain an understanding of clinical dietitians' reflections regarding the process of goal-setting with patients at risk of malnutrition.

    Methods: Six semi-structured audio-recorded focus group discussions were held with registered dietitians (n = 29) from primary healthcare and hospitals in Sweden. Focus group transcripts were analysed thematically to find patterns in the data and identify themes.

    Results: Dietitians expressed striving to explore patients' narratives, capabilities, and resources before deciding on goals. They described different strategies in counseling patients and a lack of patient participation in the goal setting. They emphasized the difficulties of setting feasible goals due to discrepancies between their clinically oriented goals and patients' personal goals.

    Conclusion: Findings highlight a gap in the process of setting goals for patients at risk of malnutrition, where patients' participation was lacking. Education in SDM, and strategies and tools to support dietitians in involving patients in goal-setting, are required to bridge the gap and promote person-centeredness. Practice implications: Findings may be further used to develop tools and strategies, and design studies on the implementation of and education in SDM and goal-setting for malnutrition interventions.

    Aims: Nutrition counselling is characterized by a collaborative approach whereby the patient and the dietitian establish goals that promote health and self-management.  Little is known about goal-setting in nutrition interventions of patients at risk of malnutrition. This study describes the perspectives and needs of patients at risk of malnutrition regarding goals of nutrition interventions.

    Methods: Semi-structured interviews were conducted with 15 patients from three primary care centres and one hospital in mid-Sweden. Interview transcripts were analysed using reflexive thematic analysis to identify themes and patterns in the data. 

    Results: Findings highlight that the participants rarely reflected on their personal goals of the nutrition intervention. Instead, they strived to maintain strength and energy, with the nutrition counselling being seen as supportive in managing nutrition impact symptoms. They described discrepancies between their perspectives and the dietitian’s regarding weight goals and the diet prescribed to gain weight.

    Conclusion: Elucidating patients’ goals is key to counteracting the discrepancies between the dietitians’ clinically oriented goals and patients’ perspectives. New strategies and tools that support collaborative goal-setting in nutrition interventions are needed to provide person-centred nutrition care.

    Bakgrund: Att bli förälder är en omvälvande händelse och ett antal studier har gjorts på hur det påverkar matvanorna. Resultaten pekar åt lite olika håll, men det verkar som att det främst är mammans kost som påverkas och ofta till det sämre jämfört med kostråden. Få svenska studier har gjorts inom ämnet. Med hjälp av data från den nationella kostundersökningen Riksmaten 2010/2011 har denna studie undersökt hur det ser ut i Sverige.

    Syfte: Att undersöka skillnader i livsmedelsval och näringsintag samt följsamhet av Livsmedelsverkets kostråd bland kvinnor och män i hushåll med eller utan barn.

    Metod: Studien bygger på sekundär analys av data från Riksmaten 2010/2011. Deltagarna som uppfyllde urvalskriterierna delades in i fyra grupper; kvinnor med barn, kvinnor utan barn, män med barn samt män utan barn. Totalt deltog 1113 personer, relativt jämnt fördelat över grupperna. Grupperna jämfördes med avseende på livsmedelsintag, näringsintag samt efterlevnad av kostråden och skillnader testades med statistiska tester. En principalkomponentanalys (PCA) gjordes för att identifiera eventuella samband mellan livsmedelsval, ålder och utbildningsnivå.

    Resultat: Kvinnor med barn äter mer mejeriprodukter (mjölk, fil, yoghurt) (p=0,018), snacks (p=0,003) och rött kött (p=0,010) och har ett högre rapporterat intag av kalcium (p=0,049) samt lägre alkoholintag än kvinnor utan barn (p=0,005). Bland männen är det bara intaget av rött kött och järn som skiljer sig signifikant åt mellan de två grupperna med respektive utan barn. Följsamheten av Livsmedelsverkets fyra kostråd som är indikatorer på bra kostmönster är låg i alla grupper. PCA:n för kvinnorna visar att det finns ett mönster mellan variationer i livsmedelval och ålder samt i viss mån om det finns barn i hushållet. Hos männen syns inte lika tydliga mönster.

    Slutsats: Sammantaget är få skillnader i livmedelsval och näringsintag mellan vuxna med respektive utan barn. De skillnader som har identifierats gäller främst kvinnorna, vilket överensstämmer med tidigare forskning. Ålder och utbildningsnivå kan relateras till vissa av variationerna i livsmedelsval inom grupperna men förklarar få skillnader mellan grupperna med respektive utan barn.

    SAMMANFATTNING

     

    Bakgrund: EG-förordning 1924/2006 trädde i kraft 2007 med syfte att skydda konsumenter från missvisande närings- och hälsopåståenden på livsmedel. Tidigare studier gällande hälsopåståenden och märkningar påverkar konsumenters uppfattning om produkters hälsosamhet. Tydliga deklarationer och märkningar minskar bias, medan motivation och kunskap påverkar tolkningen av hälsopåståenden. Unga vuxna (18–30 år) har nationellt sämst matvanor. Eftersom kost är den tredje största orsaken till sjukdomsbörda i Sverige är en studie om unga vuxnas förståelse och attityd till hälsopåståenden intressant.

     

    Syfte: Syftet är att undersöka unga vuxna konsumenters förståelse och attityd av märkning med hälsopåståenden med betaglukaner och antioxidanter på livsmedel.

     

    Metod: Kvantitativ tvärsnittsstudie med en webbenkät som vidarebefordras på sociala medier, via en poster med QR-kod, samt utdelning av lappar med QR-kod. Totalt insamlades 126 svar som via statistikprogrammet Jamovi genererade deskriptiv statistik och sambandsanalyser.

     

    Resultat: Av deltagarna hade 26,2 % kännedom om betaglukaner, och hälften om oxidativ stress. 77,8% ansågs ha kännedom om livsmedel med hälsopåståenden. Endast 24 livsmedel angavs som klassificeras som hälsopåståenden. Gällande smoothien fick 88,1% av deltagarna en positiv uppfattning av att se framsidan av produkten, medan motsvarande siffra för havredrycken var 48,4%. Efter att ha läst hälsopåståendena och innehållet i produkterna, hade 51,6% en positiv uppfattning om smoothien och 35,7% om havredrycken. 

     

    Slutsats: Det finns tendenser av okunskap hos unga vuxna konsumenter gällande hälsopåståenden. Uppfattningen om både smoothien och havredrycken försämrades från att först se framsidan till att ha läst om produktens hälsopåståenden och innehåll vilket indikerar på att hälsobudskapet i dryckerna bidrog till en sämre attityd mot produkten.

    Inledning: Jordens resurser behöver räcka till allt fler människor och under längre tid då befolkningsmängden ökar och medellivslängden blir allt högre. Globalt sett står köttproduktionen för ca 15-20 procent av de totala växthusgasutsläppen. Västerländsk kost kännetecknas av hög köttkonsumtion och behöver riktas om mot alternativa proteinkällor till rött kött för att minska belastningen på klimatet. Trenden globalt pekar på att köttkonsumtionen ökar, i Sverige har den dock minskat.

    Syfte: Studiens syfte var att undersöka konsumenters syn på att minska konsumtion av rött kött i relation till dess påverkan på klimatet.

    Metod: En kvantitativ tvärsnittsstudie genomfördes med en webbenkät innehållande 11 frågor. Enkäten publicerades på Facebook och skickades ut via direktmeddelande till konsumenter i Sverige. Data från 248 enkäter bearbetades med hjälp av deskriptiv samt hypotesprövande statistik.

    Resultat: Majoriteten av respondenterna rapporterade att de har minskat sitt intag av rött kött. Det finns en signifikant skillnad (p=0,003) mellan kvinnor och män gällande minskad konsumtion av rött kött. Klimataspekter uppges som den vanlligaste anledningen till att minska på konsumtionen av rött kött. Det finns ett signifikant samband (p=0,001) mellan självskattad nivå av kunskap om det röda köttets påverkan på klimatet och hur viktigt det anses vara att minska på konsumtionen av rött kött för klimatet.

    Slutsats: Konsumenterna i denna studie uppger sig ha kunskap om det röda köttets påverkan på klimatet och verkar mer klimatmedvetna än vad som tidigare antytts. Kvinnorna uppger sig ha minskat sin konsumtion av rött kött mer än männen. Däremot anges klimataspekter som den vanligaste anledningen till minskad konsumtion av rött kött för båda könen.

    Background: Community-based approaches have been identified as an effective strategy to address the growing burden of noncommunicable diseases (NCDs) worldwide. However, little is known about community as a concept among people living in socioeconomically disadvantaged settings and stakeholders’ interactions and engagement in NCDs prevention and management.

    Objective: The aim of this study was to understand; (1) the meaning of community among people living in socioeconomically disadvantaged suburbs in Region Stockholm and (2) how communities interact and engage with stakeholders at local and regional levels for the prevention and management of type 2 diabetes (T2D).

    Methods: This qualitative study was conducted in three municipalities in Region Stockholm with a high proportion of migrants. Multiple data collection methods were used, including observations of community activities; interviews with community members, representatives of public authorities and NGOs; and group interviews with healthcare providers. Data were analyzed using content analysis.

    Results: Community was perceived as living in close proximity with shared beliefs, values and resources. Although they recognized its social and cultural diversity, community members focused more on the commonalities of living in their neighborhood and less on their differences in country of birth and languages spoken. Several mismatches between awareness of community needs and the available skills and resources among stakeholders for T2D prevention were identified. Stakeholders expressed awareness of T2D risk and interest in addressing it in a culturally appropriate manner.

    Conclusion: Interaction between the communities and stakeholders was limited, as was engagement in T2D prevention and management. This highlights barriers in the collaboration between community, healthcare institutions and other stakeholders which consequently affect the implementation of preventive interventions. Innovative ways to link the community to the healthcare sector and other local government institutions are needed to build the capacity of health systems for T2D prevention in socioeconomically disadvantaged communities.

    Bakgrund: Äldre personer (>65 år) har en ökad risk för undernäring och rekommenderas därför ett högre energi- och proteinintag. Tidigare studier som undersökt energi- och proteinintag för äldre på vård- och omsorgsboenden har visat ett lägre intag än behov. Detta kan leda till en ökad risk för sjukdom och relaterade komplikationer. 

    Syfte: Studien ämnar att jämföra energi- och proteinbehov med intag för äldre personer på ett vård- och omsorgsboende samt undersöka hur stor del av en portion som äts upp.

    Metod: En tre dagars vägd kostregistrering utfördes för 7 deltagare på ett vård- och omsorgsboende. Deltagarnas individuella energi- och proteinbehov beräknades utifrån aktuella riktlinjer för äldre och jämfördes med intaget.

    Resultat: Studien visade att energiintaget för gruppen i genomsnitt uppgick till 93 % av beräknat behov och att 5 av 7 deltagare inte nådde upp till sitt behov. Proteinintaget uppgick till i genomsnitt 65 % av behovet och ingen deltagare uppnådde rekommendationen på 1,2 g protein/kg/dygn. I genomsnitt konsumerade deltagarna 85 % av måltiden.

    Slutsats: Resultatet indikerar att det finns svårigheter för äldre personer att uppnå sitt energibehov, men framför allt sitt proteinbehov, trots en etablerad kostplanering. Den största utmaningen är att tillgodose proteinbehovet vid minskade portionsstorlekar eftersom måltiderna inte blir tillräckligt proteintäta. Kosten på vård- och omsorgsboenden bör därför ytterligare anpassas till individuella behov. Vidare forskning behövs som undersöker energi- och proteinintag för äldre personer på vård-och omsorgsboenden.

    Bakgrund: Matsvinn utgör ett globalt samhällsproblem genom sin negativa klimat- och miljöpåverkan. I Sverige har det utvecklats en nationell handlingsplan för att minska på matsvinnet. I svenska skolkök efterfrågas mer strategier för att minska på matsvinnet.

    Syfte: Syftet var att undersöka kökspersonalens erfarenhet och synen på matsvinn inom skolor i offentliga sektorn.

    Metod: Åtta kvalitativa semistrukturerade intervjuer med kökspersonal som arbetade i fem kommunala skolkök i en mellanstor kommun i Sverige. Intervjuerna transkriberades för att sedan bearbetas genom innehållsanalys.

    Resultat: Skolkökspersonalens uppfattningar var att deras och lärarnas närvaro i matsalen, bristen på kommunikationen mellan skolan och måltidsservice samt elevernas matpreferenser, beteende och ålder påverkade matsvinnet. De utförde även förebyggande arbete i form av användning av olika köksverktyg, återanvändning av matrester, provsmakning av maträtter, minskning av lagret och svinntävlingar.

    Slutsats: Resultatet visade att skolkökspersonalen hade gemensamma uppfattningar om källor till matsvinn och tillämpade en del förebyggande arbete, dock för att minska matsvinnet skulle det vara gynnsam med ett bättre samspel mellan de involverade verksamheterna.

    Introduktion: Kunskapen om hur mycket vi äter och dricker bygger till största delen på uppgifter från matvaneundersökningar där deltagarna själva rapporterat vad de har ätit och druckit. Uppgifter om livsmedelskonsumtion användas bland annat för att studera samband mellan matvanor och hälsa. I studier där hälsoeffekter av fiskkonsumtion undersöks, används ofta uppgifter om portionsstorlekar för fisk.

    Syfte: Att undersöka skillnader i portionsstorlekar för de fiskslag och fiskprodukter som rapporterats i matvaneundersökningen, Riksmaten vuxna 2010-11. Skillnader i portionsstorlek kommer att undersökas i relation till deltagarnas kön, ålder och eventuell underrapportering. Ett delsyfte var att ta fram ett grupperingssystem för de registrerade fiskalternativen i undersökningen.

    Metod: Portionsstorlekarna har tagits fram för kvinnor och män respektive för hela gruppen. Underrapportörer, godkända rapportörer och överrapportörer har beräknats med hjälp av Black. Wilcoxon rank sumtest användes för att analysera skillnader mellan kvinnors och mäns genomsnittliga portionsstorlekar. För att analysera skillnader mellan olika åldersgruppers genomsnittliga portionsstorlekar gjordes först ett övergripande Kruskal-Wallis-test.

    Material: Beräkningarna i rapporten baseras på redan insamlad data från Livsmedelsverkets senaste matvaneundersökning, Riksmaten – vuxna 2010-11 (2). I undersökningen ingick kvinnor och män i åldrarna 18-80 år, (n= 1 797).

    Resultat: Totalt har fjorton olika grupperingar för fisk och fiskprodukter skapats. Gruppering har gjorts efter tillagning- eller beredningsform samt utifrån olika fisksorter. Männens genomsnittliga rapporterade portionsstorlekar var signifikant större än kvinnornas i tio av grupperna.

    Slutsats: I studien framkom att kvinnors och mäns rapporterade portionsstorlekar för fisk skiljer sig. En viktig slutsats är därför att det vid risk- nyttovärderingar av fiskkonsumtion är värdefullt att göra scenarier med hänsyn tagen till dessa skillnader. Fortsatt forskning behövs dock då uppgifterna om hur mycket fisk deltagarna ätit baserats på data från självrapporterat skattat intag.

    Plasma alkylresorcinols (AR) are useful as dietary biomarkers of wheat and rye whole grain (WG) during interventions but need to be validated in free-living populations. This study estimated the medium-term reproducibility and relative validity of plasma AR as biomarkers of WG and cereal fiber intake. Seventy-two Swedish adults kept 3-d weighed food records on 2 occasions 2-3 mo apart. Of these men and women, 51 provided a fasting blood sample at the end of each occasion. In addition, 18 participants provided 3 fasting and 3 nonfasting samples for 3 consecutive days on the first and second occasions, respectively. Dietary and blood variables did not differ between the 2 occasions. Nonfasting plasma total AR concentration [210 nmol/L (95% CI: 140, 314)] was higher than fasting [99 nmol/L (95% CI: 72, 137)] (P < 0.0001). Mean WG intake was 70 ± 61 g/d (41% from rye) and the intra-class correlation coefficient was 0.44 (95% CI: 0.26, 0.63) for total WG intake and 0.47 (95% CI: 0.27, 0.67) for the fasting plasma total AR concentration, suggesting moderate reproducibility.     Plasma alkylresorcinols (AR) are useful as dietary biomarkers of wheat and rye whole grain (WG) during interventions but need to be validated in free-living populations. This study estimated the medium-term reproducibility and relative validity of plasma AR as biomarkers of WG and cereal fiber intake. Seventy-two Swedish adults kept 3-d weighed food records on 2 occasions 2-3 mo apart. Of these men and women, 51 provided a fasting blood sample at the end of each occasion. In addition, 18 participants provided 3 fasting and 3 nonfasting samples for 3 consecutive days on the first and second occasions, respectively. Dietary and blood variables did not differ between the 2 occasions. Nonfasting plasma total AR concentration [210 nmol/L (95% CI: 140, 314)] was higher than fasting [99 nmol/L (95% CI: 72, 137)] (P < 0.0001).     Majoriteten av idrottare drabbas aldrig av ätstörningar trots hård träning, prestationsinriktning och en mer eller mindre noggrann kosthållning och viktreglering . Det finns dock idrottare som under lång tid kämpar med en ätstörningsproblemtik där ett komplicerat förhållande till mat och träning uppstått. Vissa studier talar vidare för att idrotten skulle kunna skydda individen för ätstörningar medan flera studier visar en högre förekomst av ätstör-ningar och stört ätbeteende inom än utanför idrottsvärlden, i synnerhet inom estetiska och viktrelaterade idrotter . Maten och träningen är båda komplexa fenomen och en djupare insikt och öppenhet kring hur man hanterar denna form av ”idrottsskada” är värdefullt såväl inom idrottsvärlden som inom hälso- och sjukvården. Dietisten med fördjupad kunskap inom idrott och ätstörningar förefaller vara en värdefull person i detta arbete.

    Bakgrund: Äldre personer är ofta missnöjda med sin vikt. Samtidigt tyder studier på att det Body Mass Index (BMI) som indikerar övervikt (BMI 25-29) i den yngre befolkningen är ett optimalt BMI förenat med långt liv hos äldre. Sedan 2011 föreslår Socialstyrelsen ett BMI-intervall på 23-29 som optimalt för äldre.

    Syfte: Att undersöka äldres förhållningssätt till sin vikt och kunskap om hälsosam vikt.

    Metod och material: En kvantitativ tvärsnittsundersökning genomförd på träffpunkter för äldre och gym i två svenska storstäder. Personer ≥65 år i ordinärt boende tillfrågades att svara på en enkät. BMI beräknades efter självskattad längd och vikt. Undersökningen omfattade 135 äldre (72 % kvinnor, 28 % män) mellan 65-96 år (medelålder 75 år) och BMI 19-35 (medel BMI 25).

    Resultat: Av de med ett BMI 23-29 ville 49 % gå ner i vikt. Av de med ett BMI ≤22 var 90 % nöjda med sin vikt. Två tredjedelar trodde att det är mest hälsosamt för äldre att väga mindre än eller lika som yngre. Andelen som uppskattade sin kunskap om hälsosam vikt för äldre som tillräcklig var 74 %. Ungefär hälften av deltagarna hade inte fått information om hälsosam vikt för äldre.

    Slutsats: Kunskapen om hälsosam vikt var låg och många av deltagarna med ett optimalt BMI hade en önskan om viktnedgång. Då viktförändringar hos äldre kan innebära hälsorisker är det av betydelse att den aktuella gruppen är välinformerad. Mer information skulle kunna främja hälsa, samt eventuellt bidra till ett minskat missnöje med vikten.

    Introduktion: Förekomsten av matförgiftningar orsakade i Sverige beräknas till drygt 500 000 fall per år. Flertalet internationella studier belyser kunskapsbrister och ofördelaktiga beteenden beträffande livsmedelshygien, varav vissa indikerar detta särskilt förekommande bland unga vuxna. Friska unga vuxna kan ha ansvar eller kan komma att ansvara för livsmedelshanteringen åt personer, exempelvis barn och äldre, med ökad risk för matförgiftning. Främjande av säker livsmedelshygien bland konsumenter är angeläget för folkhälsa och samhällsekonomi.

    Syfte: Syftet var att undersöka antal korrekta svar på kunskapsfrågor, självrapporterat beteende och inställning beträffande livsmedelshygien, hos studenter vid Uppsala universitet.

    Metod och material: Kvantitativ internetbaserad enkät som datainsamlingsmetod valdes då studenter vid Uppsala universitet ombads att delta. Enkäten publicerades på sociala mediet Facebook.

    Resultat: 123 enkätsvar erhölls. 8,9 procent angav att de varit matförgiftade under det senaste året. 78 procent hade fler än fem korrekta svar på totalt nio kunskapsfrågor. Antalet korrekta svar på kunskapsfrågorna skiljde sig signifikant beroende på kunskapskälla, inte beroende på kön. Ofördelaktigt beteende beträffande livsmedelshygien rapporterades av både respondenter med 0-4 respektive 5-9 korrekta svar på kunskapsfrågorna. 66,7 procent instämde helt med att kunskap om livsmedelshygien är viktigt.

    Slutsats: Att 78 procent av respondenterna hade fler än fem korrekta svar av totalt nio kunskapsfrågor kan bero på att en betydande del respondenter angav sig ha eftergymnasial utbildning i ämnet. De egna kunskaperna uppfattades som tillfredsställande av respondenterna. Trots detta angavs förekomst av riskfyllda beteenden. Det är relevant att kritiska moment kopplade till livsmedelshygien fortsatt lyfts, oavsett kunskapsnivå och tilltro till egen förmåga.

    Bakgrund: Tidigare studier har påvisat samband mellan träning och kost. Ett optimalt energiintag bör eftersträvas vid regelbunden träning där såväl frekvensen samt val av mellanmål kan spela en stor roll. En möjlighet för att medvetet kunna göra hälsosamma matval vid träning är att ha kunskap om och känna till de allmänna kostråden. Studier kring befolkningens kännedom om Livsmedelsverkets kostråd och om dessa följs finns det i dagsläget brist på.

    Syfte: Studiens primära syfte var att undersöka frekvensen av mellanmål hos vuxna individer som motionstränar regelbundet i form av aerob träning. Det sekundära syftet var att undersöka kännedom och följsamhet till Livsmedelsverkets kostråd hos målgruppen.

    Metod: En kvantitativ tvärsnittsstudie genomfördes med webbenkät på 22 frågor som publicerades i sju träningsgrupper på Facebook samt skickades ut via mail till ekonomistudenter på Uppsala universitet. Resultatet från 101 enkäter bearbetades med hjälp av beskrivande statistik.

    Resultat: Måltidsintaget hos majoriteten av respondenterna var mellan 4-5 måltider per dag, de flesta åt 1-2 mellanmål per dag. Respondenterna åt oftare mellanmål efter sin träning än innan. Nästan hälften ansåg att frekvensen av antal mellanmål blev högre de dagar ett träningspass utförs. Respondenterna konsumerade hälsosamma mellanmål oftare än ohälsosamma. Ungefär en fjärdedel av respondenterna kände till Livsmedelsverkets kostråd medan närmare hälften kände till en del av dem. De flesta följde kostråden till viss del.

    Slutsats: Respondenterna åt oftare mellanmål efter sin träning än före samt mellanmålsfrekvensen blev högre hos ett flertal vid motionsträning. Fler kan behöva känna till Livsmedelsverkets kostråd för att öka möjligheten till att de efterföljs genom fler kommunikationskanaler till individer som motionstränar.
